Did you know that tomorrow (Tues Mar. 4th) is National Pancake Day? It is always one of my favorite days because you can get a free short stack of pancakes at IHop. The of course suggest that you make a donation to the Children’s Miracle Network in exchange. But I heard on the radio today that, at least in Grand Rapids, all the money benefits our local children’s hospital. I love that the money is staying local!
I’m not sure I will make it to IHop tomorrow so instead I rounded up my favorite pancake recipes from friends and Pinterest and thought we could do a little top ten. One of my favorite meals around here is breakfast for dinner. Tuesday will be BRINNER for sure!!
My mom has a famous red velvet cake that she makes for special occasions so loving red velvet anything is in my DNA. The recipe here is for a gluten free version, but you can easily modify that if you want. Yummy!
Half the time I think I just make a big breakfast so I have an excuse to eat lots of bacon. Might as well mix it right in with the pancake. Why waste time eating two separate things?

I gotta tell you if granola pancakes are on the menu at a restaurant it is almost always what I am getting. I love the soft squishy pancake with a tiny bit of crunch. Add in bananas and you had me at hello!

One of our favorite brunch places in Chicago used to have a lemon poppyseed pancake on their special spring menu. It just tasted like spring. I could use a little spring right now…..
My love of s’mores runs so deep I have an entire Pinterest board just dedicated to s’mores! This is basically just regular pancakes with a warm marshmallow and chocolate chips sandwiched in between, but ever since I saw this, it is pretty much all I can think about. Can you imagine it when camping???

This is such a great shortcut to making pancakes, especially if you were serving a big crowd. Especially because there always seems to be a lot of chaos when I am cooking pancakes and I always seem to overcook one batch.
This book is fantastic for 10,000 reasons but one of the main recipes in it that I use time and time again is her pancake mix. I simply mix up a batch and store it in the fridge for anytime the pancake mood strikes. Always be prepared for pancakes.
I will also mention that we make all our pancakes on this awesome pan we got when we got married. Almost 13 years and still making delicious pancakes!!
