Lily turns 11 on Tuesday. ELEVEN! She had a birthday party this past weekend at a local skating rink and I had tons of cute ideas for roller skating themed cakes. She however had VERY strong opinions about what she wanted for her cake. To say this girl is obsessed with Swedish fish is an understatement. And she wanted a cake that tasted like her favorite candy with Swedish fish on top. We compromised with cupcakes because it seemed a lot easier to me and I’m the boss. Now to find a cupcake that tasted like chewy, fruity, sugary, artificial flavors.

I cobbled together a few things I found on the internet and came up with this recipe. It isn’t healthy at all. But for once a year on my sweet girl’s birthday it completely fit the bill. All the guests, and most importantly, the birthday girl herself, were amazed that they tasted so much like the real deal. Mom Of The Year Award is on its way.

Swedish Fish Cupcakes with Vanilla Buttercream Frosting

Serves: 24 cupcakes
  • 2¼ c. flour
  • 1½ c. sugar
  • 3½ t. baking powder
  • 1 t. salt
  • 1 3 oz. box cherry jello
  • 1 c. water
  • 5 egg whites
  • ¼ c. oil
  • 1 t. strawberry flavor
  • 1 oz. red food coloring
  • 1 8 oz. bag Swedish fish
  • 2 c. confectioners' sugar
  • 2 T. butter, softened
  • 2 T. milk
  • ½ t. vanilla extract
  1. Preheat oven to 350 degrees.
  2. Mix together flour, sugar, baking powder, salt, jello packet, water, egg whites and oil until just incorporated.
  3. Add in strawberry flavor and red food coloring.
  4. Beat at medium speed for 2 minutes.
  5. Chop all but 24 Swedish fish into small pieces with kitchen shears.
  6. Fill each cupcake wrapper ¾ full with batter.
  7. Bake at 350 for 15 minutes or until inserted toothpick comes out clean.
  8. While the cupcake is baking make your frosting.
  9. Combine sugar, butter, milk and vanilla and beat until fluffy.
  10. Pipe frosting on top of cooled cupcakes and top with a Swedish fish.
