Peanut Butter Chocolate Chip Oatmeal Skillet Cookie

Um yes. It is as good as that title sounds.

Ryan and I used to frequent a restaurant back when we only had one kid and eating out didn’t seem like such an ordeal. They had a skillet cookie served warm with ice cream that was amazing and I didn’t even think to make it at home. Until Pinterest. And it took me a while to get around to attempting it, but I made one tonight for our bible study and it is so stupid easy I don’t know why I am not making cookies like this regularly. Well, except for the whole waistline thing. Minor details.

Peanut Butter Chocolate Chip

 

PEANUT BUTTER CHOCOLATE CHIP OATMEAL SKILLET COOKIE

½ cup butter, softened
½ cup brown sugar
½ cup sugar
½ cup creamy peanut butter
1 egg
1 teaspoon vanilla1¼ cups flour
1 teaspoon baking soda
¼ teaspoon salt
1 cup old fashioned oats (not quick oats)
½ cup semi-sweet chocolate chips
Preheat oven to 350 and rub your 9 inch cast iron skillet with butter or coconut oil.
In a large bowl cream together butter and sugars until light and fluffy. Add peanut butter, egg, and vanilla and mix well.
Add in dry ingredients and mix until just combined. Fold in chocolate chips.
Gently press cookie dough into prepared skillet. (make sure dough isn’t higher than the sides because it will rise a bit when cooking.
Bake 25-35 minutes until an inserted toothpick comes out clean.
Serve warm, with ice cream of choice.
